International Projects

Projects outside Tokyo and Japan are considered individually according to location, scope and schedule. Chef Jin Yoshida developed international experience in New York and Italy, and works with teams across differing markets and supply conditions.

A limited number of engagements is accepted at any time so that each receives the attention it requires.

Yes. International projects are considered individually according to location, scope and schedule, and are accepted in limited number so each receives proper attention.

How far in advance should an enquiry be made?

Earlier is better. Concept and pre-opening work generally benefits from several months of lead time, while shorter menu reviews and training visits can sometimes be arranged within a narrower window.

What is included in the initial project review?

A reading of your outline, venue and objectives, followed by a consultation on culinary direction and kitchen conditions. From that, a written scope is prepared.

How is scope defined for an advisory engagement?

Scope is written specifically for the project — the deliverables, the phases, the amount of time on site and the level of ongoing involvement after launch.

How are fees determined?

Fees follow scope, location, schedule and the depth of involvement required. No fixed prices are published; each engagement is quoted individually after review.

Can menus be adapted to dietary, cultural and religious requirements?

Yes. Vegetarian, allergen, halal and other requirements are accommodated within Japanese technique rather than treated as a separate menu.

Do you work with hotels, restaurant groups and luxury brands?

Yes — hotel and resort operators, restaurant groups, hospitality developers, luxury brands and selected private projects.

Is training available for an existing culinary team?

Yes. Technique and discipline can be transferred to your brigade on site, or through a private training programme in Tokyo.

How is an enquiry submitted?

Through the private project enquiry form. Each submission is reviewed individually, and a reply follows where there is a suitable fit.
